GO SHORTY IT’S YOUR BIRTHDAY..I recently bought a book called Champagne CocktailsbyDavid Biggs. And I figured what a better way to celebrate my birthday then with a little Champagne…so I cracked open my trusty book and decided to get started.

Royal Screw
Sherry Glass of Cognac
Sherry Glass of Orange Juice (fresh Squeezed)
Dry Champagne
Directions:
Pour cognac and orange juice into a chilled wine glass, sit and add the chilled champagne to fill the glass.
Snappy Apple Fizz
1 Very Ripe Golden Apple
1 cup of Calvados (Apple Brandy)
About 1/2 cop clear, still apple juice
Champagne
Directions
Peel and core the apple and cut it inot neat slices. Place the slices into a shallow bolw or saucer, cover with Calvados and leave in the fridge overnight to soak. When ready to serve, place a slice of the soaked apple in each Champagne flute and cover with the calvados. Add apple juice to half fill the glass. carefully top with chilled champagne.
Fuzzy Peach
1 Ripe yellow Peach
1 cup peach Schanpps
1 cup peach juice or puree
Champagne
Peel the peach, remove the stone and cut into thin slices. Place the slices in a shallow bowl or cup, cover with peach schnapps and store overnight in the fridge. When ready to serve, place a slice of peach in each champagne flute and cover with the peach schnapps. Add the peach juice or puree to half fill the glass. Carefully top up with chilled champagne.
Blue Champagne Cocktails
Ice Cubes
1 bar measure (about 30 ml/1 fl oz)
vodka
juice of 1/2 lemon
Splash of triple sec
Dash of Blue Cucacao
Champagne.
Directions
Place four or five ice cubes in a cocktail shaker, add the vodka, lemon juice, triple sec and Curacao. Shake well and strain into a champagne flute, to about a quarter full. Careful top up with champagne. Obviously, the intensity of the color can be regulated by adjusting the quantity of blue Curacao used.
